Dairy Free Pumpkin Chai Bubble Tea
Ingredients for Bubble Tea:
- ¼ cup black tea boba tapioca pearls
- 1 tablespoon coconut sugar (or brown sugar)
- 2 teaspoons loose spicy chai tea brewed in 12 oz of water, cooled
- Optional, shot of espresso or cold brew coffee
- ice
Ingredients for the dairy free pumpkin spice creamer:
- ⅔ cup your favorite dairy free milk
- 1½ tablespoons pumpkin puree (NOT pumpkin pie mix)
- 2 tablespoons coconut sugar (or 1½ tablespoons brown sugar)
- ¾ teaspoons Roselle Pumpkin Spice Extract
Directions:
- Put a pan with several inches of water in it on the stove and bring it to a boil.
- Add the black tea boba tapioca pearls and simmer until the pearls are tender and chewy (5-10 minutes).
- Drain almost all of the water (leave just less than ¼ cup, just enough for the pearls to sit in, not covering them) and stir in the coconut or brown sugar.
- In a small pitcher or bowl mix together the milk, pumpkin puree, coconut sugar, and pumpkin spice extract.
- Divide the tapioca boba pearls in their syrup between 2 glasses.
- Divide the cooled spicy chai tea between the glasses, coffee if using, and top with ice.
- Pour in the pumpkin spice creamer according to your preferences.
- Stir, and enjoy.
