Healthy Piña Colada Smoothies


    • 1 1/2 cups light coconut milk
    • 1 teaspoon vanilla extract
    • 3 cups frozen pineapple (no sugar added)
    • 2 Tablespoons honey
    • fresh pineapple for garnish, optional


    1. Add the coconut milk, vanilla, frozen pineapple, and honey to a blender canister. Blend until completely smooth. Add a bit more coconut milk as necessary for blending.
    2. Pour into glasses and garnish with fresh pineapple.
    3. Serve immediately.

Yields:  2 Mug with Attitude servings
