Shamrock Irish Mug Cake

MogoBlog MogoLicious Tasty Tip of the Day:   Not many of us have time to bake, but once in a while you may get a sweet tooth and want to make something quick! The best thing about making this mug cake is the recipe actually makes two cakes. So make one for yourselves and give one to a friend!

Shamrock Irish Mug Cake


  • 1 large egg
  • 3 tbs. Vegetable oil
  • ¼ cup granulated sugar
  • ½ tsp. pure vanilla extract
  • 1 tsp. liquid green food coloring
  • 3 tbs. buttermilk
  • 1 drop peppermint extract (or 2 to 3 tbs. Irish whiskey)
  • 1/3 cup self-rising flour
  • Pinch of Kosher salt
  • Can of cream cheese white frosting
  • Green crystals

Directions (make in your MogoBox Mug):

  1. In a bowl, whisk together the egg and oils with a fork.
  2. Stir in the sugar, vanilla, food coloring, buttermilk, and peppermint or whiskey.
  3. Add the flour and salt. Beat the batter until smooth.
  4. Divide the batter between two mugs.
  5. Microwave separately for 1 ½ to 2 ½ minutes each until risen and firm.
  6. Let cool and frost with the cream cheese frosting (tinted green perhaps?) and sprinkle with the green crystals!
