Pearman’s Toddy

Ingredients for Cinnamon Simple Syrup:

  • 12 cups sugar
  • 4 sticks cinnamon, plus one for garnish

Ingredients for the Cocktail:

  • 2 oz. gin
  • 1 oz. cinnamon simple syrup
  • 12 oz. lemon juice
  • 1 dash Angostura bitters

Directions to Make the Syrup:

  1. Combine 2 cups water, sugar, and 4 cinnamon sticks in a 2-qt. saucepan; simmer for 10 minutes until sugar has dissolved.
  2. Discard cinnamon sticks and set syrup aside.
  3. Makes about 1½ cups.
  4. Syrup will keep, refrigerated, for up to two weeks.

Directions to Make the Cocktail:

  1. Heat gin, syrup, lemon juice, and 2 oz. water in a 2-qt. saucepan.
  2. Remove from heat and add bitters.
  3. Serve in a mason jar or mug with a cinnamon stick as garnish.

Yields:  1 cocktail
