Funfetti Mug Cake

Funfetti Mug Cake Ingredients:

  • 2 tablespoons (1oz/28g) butter
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons sugar
  • 6 tablespoons (50g/ 1¾ oz) self-rising flour ( to make SF flour add 2 tsp of baking powder to 150g/6oz/1 cup plain flour)
  • tiny pinch of salt
  • Best-Ever Buttercream Frosting

Best-Ever Buttercream Frosting Ingredients:

  • 1½ cups (12 oz/340 g) butter, softened
  • 6 cups (1 lb 8oz/680g) icing sugar (powdered sugar), sifted
  • 2 teaspoon vanilla extract
  • Seeds scraped from one vanilla bean pod (optional)
  • 2-3 tablespoons milk or cream
  • Pinch of salt

Funfetti Mug Cake Directions:

  1. Place the butter in a large mug and microwave it for 20 to 30 seconds until melted.
  2. Add the egg and whisk it in with a fork.
  3. Stir in the milk, vanilla, and sugar.
  4. Add the flour and salt. Mix the batter with a fork until smooth.
  5. Divide the batter between two mugs. Microwave separately for 50 seconds each until risen. Take care not to overcook or the cake will dry out fast.
  6. Once cooled, pipe on a swirl of Buttercream Frosting and enjoy!

Buttercream Frosting Directions:

  1. In a stand mixer fitted with the whisk attachment or using an electric hand mixer whip the butter until light and creamy for about 7-8 minutes on medium/high speed.
  2. Once the butter is pale in color and light slowly add in the icing sugar one spoon at a time on medium speed. Let the sugar fully incorporate before adding in more sugar.
  3. Add the vanilla extract, vanilla bean seeds, salt and cream or milk.
  4. Whip on high speed for another 3-4 minutes until very light, creamy, and fluffy.
  5. Use the buttercream straight away or keep it refrigerated for up to 4 weeks. Before use, make sure it comes to room temperature.
  6. Makes 12 servings

Mug Cake Prep Time: 4 minutes
Frosting Prep Time: 15 minutes
Mug Cake Cook Time: 1 minute
